INGREDIENTS

  • 200ml chardonnay
  • 15 gm gelatine
  • 4 egg yolks
  • 70 gm white sugar
  • ½ vanilla bean
  • 40 gm white chocolate
  • 170 gm mascarpone cheese
  • 170 gm whipping cream
  • 50gm Salted caramel popcorn

 

 

INSTRUCTIONS
1. Pour the chardonnay into a saucepan and bring to a boil and cook until the liquid has reduced by third. Remove from the heat and set aside to cool.
2. Bloom gelatine in cold water
3. Whisk the egg yolks and sugar in a heatproof bowl, then whisk in the chardonnay vanilla beans. Make a sabayon by whisking the mixture over a saucepan of simmering water until fluffy and glossy.
4. Add the bloomed gelatin to the sabayon mix while tempering it and stir until dissolved.
5. Add the white chocolate and mix until the mixture is smooth.
6. Set aside to cool completely.
7. Whisk the mascarpone cheese and cream until soft peaks form. Fold the mixture in sabayon and mix until well combined.
8. Pipe into small glass verrine and top it up with salted caramel popcorn while serving
