Homemade Apricot Jam with Almonds: A Delightful Experience

Apricot jam is a delightful treat that captures the essence of ripe, juicy apricots. Combining sweet apricots, vanilla, and almonds creates a symphony of flavors that will elevate your breakfast spread or enhance your favorite baked goods. Ingredients:

500g fresh apricots, pitted and cut in half

400g granulated sugar

3 tablespoons almonds

1 vanilla pod

Prepare the Apricots:

Start by pitting the fresh apricots and cutting them in half. Place the apricots in a large pan and toss them with the granulated sugar until well coated. Cover the pan with a lid and let it sit for about 12 hours at room temperature. This allows the sugar to macerate the apricots, enhancing their natural flavors.

 

Prepare the Almonds:

On the next day, bring a pot of water to a boil and add the almonds. Boil the almonds for a minute or two to help loosen the skins. Drain the almonds and cool them. Then, using a paper towel, gently rub off the skins. Once peeled, dry the almonds and preheat your oven to 160°C (320°F).  Place the almonds on a baking sheet and roast them in the oven until they turn light brown in color. This will take approximately 10-15 minutes. Let the roasted almonds cool, and then coarsely chop them.

Cook the Apricot Jam:

Bring the large pan with the apricots and sugar to a boil over medium heat. Scrape the seeds from the vanilla pod and add them to the apricots and the vanilla pod itself. The vanilla will add a lovely aroma to the jam. Stir the mixture continuously to prevent scorching, and cook until the setting point is reached. This usually takes around 20 minutes, the set point can be tested by placing a small amount of jam on a chilled plate and checking its consistency. It should set and wrinkle when touched with a spoon. Once the setting point is reached, add the roasted almonds to the apricot jam and toss them well to distribute evenly.

 

Preserve the Apricot Jam:

Sterilize your jars by washing them in hot, soapy water and rinsing them thoroughly, while the jam is still hot, carefully ladle it into the sterilized jars, leaving a small headspace at the top also, place the lids on the jars tightly. Allow the jam to cool completely at room temperature before storing it in the refrigerator.

The apricot jam can be enjoyed for several weeks when stored properly.
