Delicious Coconut Barfi: A Traditional Indian Sweet Treat

Coconut barfi is a delectable Indian dessert that offers a perfect balance of flavors and textures. Made with simple yet flavorful ingredients, this sweet treat is a right fit during festivals and celebrations, or simply an indulgent treat to satisfy your sweet tooth.

To make approximately 20 pieces of coconut barfi, you will need the following ingredients:

-1/2 tablespoon ghee (10 grams): Ghee, or clarified butter, adds richness and enhances the flavor of the barfi.

-2 cups desiccated coconut (175 grams): Desiccated coconut provides the base for this sweet delicacy, imparting a delightful tropical taste.

-1 cup full-fat milk (250 ml): Milk helps bind the ingredients together and makes the barfi fluffy.

-3/4 to 1 cup condensed milk (230 to 300 grams): Condensed milk acts as a sweetener and also contributes to the smooth and fudgy texture of the barfi.

-1/2 teaspoon cardamom powder: Cardamom powder infuses the barfi with its distinct aromatic flavor.

-1/4 teaspoon rose essence: Rose essence lends a subtle floral note to the sweet and complements the coconut flavor.

-Pink food color: A few drops of pink food color bring a lovely hue to a portion of the barfi, adding visual appeal.

For garnishing, gather the following:

-1/2 tablespoon slivered pistachios: Slivered pistachios add a delightful crunch and nutty flavor to the barfi.

-1/2 tablespoon dried rose petals: Dried rose petals not only lend a touch of elegance but also contribute a subtle floral essence.

-1 sheet of silver vark (optional): Silver vark, also known as edible silver foil, is used for decorative purposes and is optional.

Now let’s dive into the preparation process:

-Heat ghee in a heavy-bottomed kadai (Indian wok) on low heat.

-Add desiccated coconut and roast over low heat for 2-3 minutes, until it releases a nutty aroma.

-Pour in the milk and cook, stirring continuously, until the milk is absorbed by the coconut.

-Add 3/4 cup of condensed milk and mix well. Taste for sweetness and add an additional 1/4 cup of condensed milk if desired.

-Continue cooking and stirring until the mixture comes together, forms a dough-like consistency, and starts leaving the sides of the kadai.

-Add cardamom powder and give it a good mix.

-Switch off the heat and divide the mixture into two halves. Transfer one half to a prepared tray and press it down firmly with a spatula to pack it.

-To the remaining coconut mixture, add rose essence and a few drops of pink food color. Mix well and transfer this pink layer over the white layer in the tray.

-Spread it evenly and press it down with a spatula to pack it firmly.

-Decorate with silver vark (if using), slivered pistachios, and dried rose petals. Gently press them using a spatula.

-Allow the coconut barfi to set at room temperature for 3 to 4 hours or in the refrigerator for 1 hour.

-Once set, cut the barfi into desired-sized pieces.

These homemade coconut barfi pieces are a delight to the senses with their enticing aroma, creamy texture, and delightful flavors.
