Jardaloo Murgh: A Perfect Blend of Chicken and Apricots

1 teaspoon of ginger paste

1 teaspoon of garam masala
Salt to taste
Freshly chopped coriander leaves for garnishing

Method:

Begin by soaking the dried apricots in warm water for 15-20 minutes until they soften. Drain the water and set the apricots aside.
Heat ghee or oil in a deep pan or kadhai over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, and cloves, and sauté for a minute until the spices release their delightful aroma.
Add the finely chopped onions to the pan and sauté until they turn a beautiful golden brown.
Introduce ginger paste and garlic paste to the pan, and cook for a minute until the raw smell dissipates.
Now, add the chicken pieces to the pan and cook until they acquire a light brown color on all sides.
