Kesar Peda Recipe: A Sweet Delight with a Saffron Twist

Kesar Peda, a traditional Indian sweet that combines the richness of khoya (mawa) with the exquisite flavour of saffron. This beloved dessert is not only a treat for the palate but also a symbol of celebrations and joy. In this easy-to-follow recipe, we’ll guide you through the process of creating these delectable saffron-infused pedas that are sure to captivate your senses.

Ingredients (Yields 12 pedas):

300 grams Khoya (Mawa)
4 tablespoons Sugar
1 teaspoon Saffron strands
2 tablespoons Milk
1/4 teaspoon Cardamom Powder (Elaichi)
1 tablespoon Pistachios, sliced
1/2 teaspoon Ghee

Step-by-Step Process:

Warm the milk gently without bringing it to a boil. Soak the saffron strands in the milk and set aside for 10 minutes, allowing the saffron’s vibrant color and aroma to infuse the milk.
In a pan or kadai, crumble the khoya and add sugar. Cook over low heat, stirring continuously for 4-5 minutes until the sugar dissolves. The khoya will melt and then thicken again.
Ensure the khoya thickens without burning, stirring consistently.
Add the saffron-infused milk and cardamom powder to the thickened khoya. Cook for a few more minutes until the mixture attains a sticky, dough-like consistency that pulls away from the sides of the pan.
Turn off the heat and let the peda mixture cool.
Once cool enough to handle, knead the mixture to achieve a smooth texture. Adding a touch of ghee at this stage imparts a glossy finish.
Shape the mixture into a log and divide it into 12 equal portions.
Roll each portion into small balls, creating a slight dent in the center to place sliced pistachios. Alternatively, you can use a peda mold for a decorative touch.
