Ingredients:

1 cup dried navy beans
1 ham hock or 2 cups diced ham
1 onion, chopped
2 carrots, diced
2 celery stalks, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
4 cups water
1 bay leaf
Salt and pepper to taste

Instructions:

Rinse the dried beans, place them in a large pot, and cover them with water. Allow them to soak overnight or for at least 6 hours.

Drain and rinse the soaked beans, then return them to the pot. Add the ham hock (or diced ham), chopped onion, carrots, celery, and garlic.

Pour in the chicken or vegetable broth and water. Add the bay leaf. Bring everything to a boil, then reduce the heat to a simmer. Cover and cook for about 2 hours, stirring occasionally.

Remove the ham hock (if used) and shred the meat, returning it to the pot. Season with salt and pepper to taste.

Continue to simmer for an additional 30 minutes or until the beans are tender.
