Autumn Delight: A Warm and Hearty Udhiyu Recipe

As the vibrant colors of autumn paint the world in shades of red and gold, it’s the perfect time to savour the warmth and comfort of traditional Indian cuisine. One dish that perfectly embodies the essence of this season is Udhiyu – a hearty and flavourful vegetable stew. Udhiyu is a beloved Gujarati dish that celebrates the bountiful harvest and the changing seasons. In this recipe blog, we will guide you through the process of preparing a delicious Udhiyu that captures the spirit of autumn.

Ingredients:

2 cups of surti papdi (green beans)
1 cup of sweet potatoes, peeled and cubed
1 cup of purple yam (ratalu), peeled and cubed
1 cup of small eggplants, halved
1 cup of raw banana (kachcha kela), peeled and cubed
1/2 cup of fresh pigeon peas (tuvar dana)
1/2 cup of grated coconut
2 tbsp of sesame seeds
1 tsp of ginger-green chili paste
2 tsp of jaggery
2 tsp of tamarind pulp
2 tsp of red chili powder
1 tsp of turmeric powder
2 tsp of garam masala
Salt to taste
4-5 tbsp of oil
Fresh coriander leaves for garnish

Instructions:

Prepare a spice mix by blending sesame seeds, grated coconut, ginger-green chili paste, jaggery, and tamarind pulp into a smooth paste.

In a large pan, heat the oil and add the spice mix. Sauté for a few minutes until it releases a pleasant aroma.

Add the surti papdi, sweet potatoes, purple yam, eggplants, raw banana, and pigeon peas to the pan. Stir well to coat the vegetables with the spice mix.

Sprinkle the red chili powder, turmeric powder, and garam masala over the vegetables. Add salt to taste.

Pour in some water, cover the pan, and let the Udhiyu simmer on low heat until the vegetables are tender and the flavors meld together.

Garnish with fresh coriander leaves, and serve hot with puris or steamed rice.
